Mango Ginger Lime Agua Fresca

Ingredients:
4 large ripe mangoes, peeled and cubed (about 4 cups)
1/4 cup fresh lime juice (from about 2-3 limes)
2 tbsp fresh ginger, peeled and roughly chopped
3-4 tbsp honey or agave nectar (adjust to taste)
4-5 cups cold water
Ice for serving
Lime slices and fresh mint sprigs for garnish
Instructions:
Start by preparing your mangoes - you want them nice and ripe for maximum sweetness and flavor. Peel and cube the mangoes, removing all the flesh from around the pit. You should have about 4 cups of mango chunks
In a blender, combine the mango chunks, lime juice, and chopped ginger. Add 2 cups of cold water and blend until completely smooth, about 45-60 seconds
Pour the blended mixture through a fine-mesh strainer into a large pitcher. Use a spoon to press the pulp against the strainer to extract as much liquid as possible
Add the honey, starting with 3 tablespoons and adjusting to taste based on how sweet your mangoes are. Add the remaining 2-3 cups of cold water gradually, tasting as you go
Stir everything together and taste for balance. You might want more lime for tartness, more honey for sweetness, or more water for dilution
Refrigerate for at least 1 hour to chill thoroughly and allow all the flavors to meld together
When ready to serve, give the agua fresca a good stir as some separation is natural. Fill glasses with ice and pour the agua fresca over top. Garnish with lime slices and fresh mint sprigs
Serve immediately while cold
